At long last! After a considerable time has lapsed, the English version of our
Home page is reality. I can only apologize to our many non-Japanese speaking
visitors that, thus far, could only see the pictures!
With this note, I wish to extent a very warm welcome to each one
of you, and express the hope that you will enjoy our contribution.
To our Japanese visitors, I express my gratitude for their comments
and enthusiastic response to this effort.
In this day of advance technology and human intervention to the natural
process, either in the name of progress or as a result of market pressures,
we have decided to go back to nature. The people we are working with in Greece
are small organic farmers, or small family companies, committed to the ways
of nature, fighting for survival in a market that demands cheap, uniformed
and visually prefect products. Look in your nearest supermarket for apples.
You will find many varieties. Don't they look nice? Like guardsmen, all the
same size, in their bright new uniform and with sinning armor. It has taken
up to twenty different chemicals to… train them. The story does not end with
apples of course. It is repeated across the whole range of food production,
extents over to clothing, table and kitchenware, and continues to every aspect
of daily life. We are determined to continue our mission to return to a way
of life in danger of disappearance.
In conclusion I like to say that, NOSTIMIA means “tasty” in Greek,
and we promise to bring to you the most “tasty” and natural Greek food and
wine. But food and wine cannot be enjoyed fully, without the culture that
has created them, and it is this culture that we shall try to present through
these pages.
