 Saffron is the most expensive spice in the world and its price competes gram
for gram with gold. Today, the retail price of 1g of saffron is
more than $7.00. The price reflects the labor intensive harvesting
and processing of saffron. Suffice is to say, that for the production
of 1kg of dried saffron, 150,000 flowers are needed!
The entire Greek production of Saffron, about 6-7 tons is concentrated
in the Kozani prefecture and carried out by some 1,500 families in the 37
Saffron producing villages of the area, all members of the Cooperative of
Saffron that does the packaging and marketing on their behalf.
Saffron the spice
Saffron is used both as a coloring agent in various dishes and cakes
and as an aromatic spice. Apart from paella it can be used in bread making,
as a very aromatic tea to be drunk hot or cold, flavoring milk, in chicken
dishes, potatoes and a large number of other recipes.
Saffron the medicine
 Saffron is not only a coloring agent, and an aromatic spice, but it also has
very beneficial therapeutic value. In the writings of Hippocrates
and other ancient doctors (Dioscourides, Galenos) the “crocus”
as the Greek name of saffron is, is often referred to as a healing
herb. Homer, Aeschylus, Pindaric and Theophrastus, mention the
crocus as one of the rare healing aromatic plants of Ancient Greece,
while Athenaios, Oreivasios, Aristophanes and Aeschylus mention
its culinary uses.
Saffron is known to have anti- thrombosis properties; it is a sedative,
an aphrodisiac, it also regulates menstruation and eases menstrual pains,
has beneficial effect on women going through the menopause, it is a tonic,
and also beneficial in pregnancy. Recent scientific research has shown that
in an in vitro study of the biological potency of the carotenes found in saffron
– that the carotenes known as vitamins A inhibit the proliferation – and at
the same time modify – carcinogenic cells in leukemia.
