ブルガー小麦は、たんぱく質を多く含む硬質小麦の仲間であるアンバー・デュラム小麦を（パスタに使うデュラム小麦は、ほとんどの品種が白小麦ですが、たんぱく質が多いと琥珀色に見えるので、その色を表すのに「アンバー」という言葉が使われます。） 全粒のまま蒸した後、粗挽きにしたものです。

The whole grain is steamed and then coarsely ground.
